Xmas beer comp: Brew Eggnog Stout or Assault Trifle better than us and win cool shit (recipes included)

Since our very first beer, we’ve aimed to bring a new level of transparency into the craft beer industry in Australia. Part of that is sharing our recipes and techniques with home brewers and others. It’s something we love to do, so we thought we’d take it to a new level with this Xmas beer competition. If you are keen to brew some great Xmas beer and win a bunch of cool shit, read on.

We often get asked for recipes but just last week we got asked for the recipe for our GABS top 10 beer, Assault Trifle for the first time. We had a lot of fun coming up with that beer so we would love to see how much fun other people can have with it.

Being the festive season, it crossed our mind that between the Assault Trifle and Eggnog Stout we have both a traditional northern hemisphere and a southern hemisphere Christmas dessert beer on our hands.

With Xmas only 5 weeks away we got thinking, let’s share our 2 most Christmassy recipes and put out a bit of a challenge.

Here’s the deal. The recipes for both beers are below. We challenge you to have a crack at brewing these 2 beers. Send a bottle to us at 15 Gardenia Grove Burleigh Heads QLD 4220 (or drop it off) before Saturday 14 January 2017.

Feel free to put your own spin on the brew, we’ll judge them based on how likely we are to put them away over the Christmas break – not how closely they match our version.

We will choose a winner who will get the following prizes:

  1. A mixed carton of Black Hops beer of their choosing.
  2. A Black Hops T-shirt.
  3. A signed copy of our book Operation Brewery.
  4. Brewer for a day. Join head brewer Govs for a brew day at Black Hops HQ in Burleigh Heads on the Gold Coast.

Assault Trifle Recipe

Grain:

  • German Pilsner – 57.7%
  • German Wheat – 19.2%
  • Flaked Oats – 9.6%
  • Flaked Barley – 4.8%
  • Flaked Wheat – 4.8%
  • Belgian Candi Syrup (Dark) – 3.8%

Hops:

  • 60min Magnum – 0.6g/L
  • Whirlpool Motueka – 2g/L

Whirlpool Kettle Additions:

  • Sponge Cake
  • Jelly Crystal
  • Toasted Coconut
  • Vanilla Bean
  • Lactose

Dry Hop:

  • Cream Sherry
  • Jelly Crystal
  • Vanilla Bean
  • Fresh fruit blended: Into 1000L – Mango, Peach, Apricot, Pineapple

Yeast: US 05

Eggnog Stout Recipe

Grain:

  • UK Maris Otter Pale – 75%
  • Flaked Barley – 12.5%
  • UK Roasted Barley – 3.1%
  • UK Chocolate – 6.3%
  • UK Black Patent – 3.1%

Hops:

  • 60min – Super Alpha – 0.75g/L
  • Whirlpool – East Kent Goldings – 0.75g/L

Spicing Dry Hop Addition:

  • Infuse the ingredients below into some brandy for at least 1 week.
  • Cinnamon
  • Nutmeg
  • Vanilla Bean

Yeast: US 04
